Start by placing the grated zucchinis in a colander and mix with 1 teaspoon salt. Allow them to sit over the sink for about 10 minutes to draw out the excess water.

Transfer the salted zucchini to a clean kitchen towel and squeeze to remove any additional liquid. The drier the zucchini, the crispier the fritters.

In a mid-sized bowl, combine flour, eggs, shredded cheddar cheese, chives, half a teaspoon of black pepper, and mix until smooth.
