While the sweet potato is cooling, chop the kale into small pieces.

In a large bowl, combine mashed sweet potato, chopped kale, black beans, egg, panko bread crumbs and paprika. Stir well to combine.
COOKING

Form the mixture into 8 equal-sized fritters.

Heat olive oil in a large pan over medium-high heat. Cook fritters for 3-4 minutes on each side, until golden brown.
STORING

Let the fritters cool completely before individually wrapping in freezer-safe reusable wraps. Store in a large resealable bag in the freezer for up to 3 months. To reheat, unwrap and microwave for 30-45 seconds.
