When does Royal Icing expire?
Royal Icing, when unopened in its packaged form, can last up to 2 years when stored at room temperature. Once opened, it can still last surprisingly long - about 4 to 5 weeks at room temperature. If you make the icing yourself using fresh ingredients, it will usually last about 1 to 2 weeks when stored in the refrigerator. If you freeze it, it can last up to 3 months.
How do you tell if Royal Icing is bad?
Identifying spoiled Royal Icing isn't too tricky. The easiest way is to check for discoloration or mold growing on the surface. Secondly, if it has developed a noticeably sour or unpleasant smell, it's time to toss it. Finally, if the icing has turned hard or overly lumpy even after stirring, it's likely it has gone bad.
Tips for storing Royal Icing to extend shelf life
• Store unopened Royal Icing in a cool, dry place like a pantry or kitchen cabinet.
• Once opened, keep it in a tightly sealed container to protect it from air exposure. It's not necessary to refrigerate, but doing so can extend its shelf life.
• Homemade Royal Icing should ideally be stored in the refrigerator, especially if made with perishable ingredients like egg whites.
• If you're planning on storing Royal Icing for an extended period, consider freezing into ice cube trays for handy, portion-sized amounts. Just remember to place in an airtight container or zip-lock bag once frozen to prevent freezer burn. To defrost, leave in the refrigerator overnight.
