Zesty Kale Salad with Avocado, Chickpeas, and Roasted Pumpkin Seeds

Scoop the flesh from one of the avocado halves out of its skin and place it in a large bowl.

Add 1 tablespoon of lemon juice, 1/4 teaspoon of salt, and the minced garlic to the bowl with the avocado. Mash everything together.

Add the coarsely chopped kale leaves to the bowl and massage them by hand with the avocado mash until the kale becomes tender.

In a separate bowl, combine the drained chickpeas and the remaining avocado half, cubed.

In a small bowl, whisk together the olive oil, remaining 1 tablespoon of lemon juice, agave nectar or honey, remaining 1/4 teaspoon of salt, and the black pepper.
