In a large bowl, combine the ricotta cheese, flour, large egg, egg yolks, granulated sugar, baking powder and salt. Mix with a paddle attachment on your mixer or by hand until the dough comes together.

Roll the dough into balls roughly the size of a walnut.
FRYING

Heat about 2-3 inches of canola oil in a heavy-bottomed pan over medium heat until it reaches 350F.

Gently drop a few dough balls at a time into the hot oil, letting them become golden on one side before turning them over to fry on the other side. Be mindful not to overcrowd the pan.

Use a slotted spoon to remove the golden donuts from the oil and place them on a plate lined with paper towels.
COATING

While still warm, roll the donuts in powdered sugar until they are generously coated.
