Indulge in these fluffy and crispy gems. Made from fresh ricotta cheese, these doughnuts offer a unique tenderness in the middle, while maintaining a perfect crisp shell that's dusted with powdered sugar. Ideal for a quick dessert or a leisurely breakfast treat.
In a large bowl, combine the ricotta cheese, flour, eggs, granulated sugar, baking powder and salt. Mix together with a spoon or with a mixer on low speed until a consistent dough forms.

On a floured surface, pinch off pieces of dough and roll each one into the size of a walnut.
3
For a uniform size, you can also roll out the dough to about one-inch thickness and use a small round cookie cutter to cut out pieces.
4
Heat about three inches of vegetable oil in a deep saucepan over medium heat until it reaches 350F.
5
Carefully drop the dough balls into the hot oil, making sure not to overcrowd the pan. Fry until golden brown on one side, then flip to fry the other side.
6
Once browned evenly, remove the doughnuts from the oil using a slotted spoon and transfer to a paper towel-lined plate to drain.
COATING
7
While still slightly warm, roll each doughnut in powdered sugar until fully coated.
