In a large bowl, combine the ricotta cheese, flour, eggs, granulated sugar, baking powder and salt. Mix together with a spoon or with a mixer on low speed until a consistent dough forms.

On a floured surface, pinch off pieces of dough and roll each one into the size of a walnut.

For a uniform size, you can also roll out the dough to about one-inch thickness and use a small round cookie cutter to cut out pieces.

Heat about three inches of vegetable oil in a deep saucepan over medium heat until it reaches 350F.

Carefully drop the dough balls into the hot oil, making sure not to overcrowd the pan. Fry until golden brown on one side, then flip to fry the other side.

Once browned evenly, remove the doughnuts from the oil using a slotted spoon and transfer to a paper towel-lined plate to drain.
