In a medium bowl, combine ground pork, 1/4 cup chopped scallions, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Form the mixture into 8 evenly sized patties.

Spray a large cast-iron skillet with cooking spray and heat over medium-high heat.

Add the pork patties to the skillet and cook for 3-4 minutes on each side, or until slightly charred and cooked through. Transfer the cooked patties to a plate.
