Thoroughly wash the brussels sprouts. Cut off the bottom ('stem') and remove any yellow or damaged leaves. Slice them in half lengthwise.

Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the brussels sprouts, cut side down, to the skillet.

Allow the brussels sprouts to cook undisturbed for 5 minutes, until the bottoms are nicely caramelized.

Reduce the heat to low, stir in the minced garlic, cook for 1 minute, then add the soy sauce and honey.

Stir the brussels sprouts to get them evenly covered with the sauce. Cover the skillet and let them simmer for 5 more minutes until they are tender and the sauce has thickened.

Serve the brussels sprouts immediately while they are still hot and the sauce is nice and glossy.
