Sunny Cherry Tomato Spaghetti with Zucchini Ribbons & Avocado Sauce

Boil a pot of salted water and cook the spaghetti according to package directions. Drain and set aside.

Meanwhile, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the cherry tomatoes and shake the pan occasionally. Cook until the tomatoes start to burst and the skins loosen, then remove from heat and set aside.

In the same pan, add another tablespoon of olive oil and the zucchini ribbons. Toss for 1-2 minutes until they are tender-crisp, then remove from heat and set aside.

Toss the cooked spaghetti with the remaining olive oil, minced garlic, lemon juice, and avocado sauce until evenly coated.

To serve, divide the spaghetti among four plates, top with the zucchini ribbons and burst cherry tomatoes. Sprinkle with chopped parsley, ground pepper, and optional grated parmesan. Serve immediately.
