Treat yourself to a fresh and flavorful pasta dish featuring sun-kissed cherry tomatoes, fragrant basil, garlic, and olive oil that's perfect for a light meal or side dish.
Bring a large pot of water to boil, then add 2 tablespoons of kosher salt. Cook the spaghetti according to package instructions to al dente. Before draining spaghetti, reserve 1 cup of pasta water.
2
While the spaghetti cooks, halve the cherry tomatoes, and mince or chop the garlic. Set aside.
3
In a large skillet set over medium-low heat, warm 1/4 cup of olive oil. Add garlic and sauté until golden, about 3 minutes. Then, add tomatoes and sauté for 2 more minutes. Season with kosher salt and crushed red pepper.
4
Add the cooked and drained spaghetti to the skillet with the tomato-garlic sauce. Pour in 1 cup of reserved pasta water and cook for an additional minute, tossing to coat the pasta evenly.
5
Taste test and adjust seasonings if necessary.
6
Remove skillet from heat. Tear the basil leaves and mix gently into the pasta. Drizzle the remaining 1/4 cup of olive oil over the pasta, and serve.
