In a large pot of cold water, add the potatoes and garlic, and bring to a boil. Add 2 teaspoons of kosher salt and cook until the potatoes are tender, about 20 to 30 minutes.

While the potatoes cook, heat the whole milk, 4 tablespoons butter, chopped sage, and thyme sprigs in a saucepan over medium heat until the butter has melted. Remove from heat and let the herbs sit in the warm milk until the potatoes are done. Remove the thyme sprigs.

Drain the potatoes and garlic, and return them to the pot. Mash the potatoes over low heat, or use a stand mixer with the paddle attachment.
