This quick and hearty Cajun chicken and mixed rice bowl offers a burst of bold flavors. Juicy bite-size chicken pieces are tossed with colorful vegetables and a store-bought Cajun spice blend, then served over a medley of fluffy, perfectly cooked wild and basmati rice.
Add the wild and basmati rice and chicken broth into a medium pot. Bring to a boil over high heat.

Reduce the heat to low, cover the pot, and let it simmer for 15 minutes, or until rice is cooked and has absorbed the broth.

While the rice is cooking, heat one tablespoon olive oil in a large skillet over medium-high heat.

Add the bite-sized chicken pieces into the skillet, toss them with the Cajun seasoning, and stir-fry until chicken is browned and cooked through, about 5-7 minutes.

Stir in the soy sauce, toss the chicken to coat evenly, then remove the chicken from the skillet and set it aside.

In the same skillet, add the remaining tablespoon of olive oil. Stir in the chopped red and orange bell peppers, onion, and minced garlic, and sauté until softened, about 5-10 minutes.

Return the cooked chicken to the skillet, add the diced tomatoes, and let it simmer until most of the tomato juice has evaporated.

Remove skillet from heat. Combine the chicken and vegetable mixture with the cooked rice, and garnish with freshly chopped parsley before serving.
