In a large pan over medium heat, melt 1 tsp butter. Add in the sliced potatoes, sprinkle them with 1/2 tsp of salt, cover the pan and let them cook for about 10 minutes until tender, stirring occasionally.

While the potatoes are cooking, in a medium pan over low heat, sauté the finely diced onion in the remaining butter until they become translucent.

Add the minced garlic, cooked bacon pieces, and dried thyme to the onions. Pour the white wine. Let the mixture simmer until the liquid has almost completely evaporated.

Preheat your oven to 350 F and lightly grease an 8 x 6-inch baking dish.

Start assembling the bake in the dish: begin with a layer of half of the cooked potatoes, followed by a layer of shredded chicken. Evenly spread half of the onion and bacon mixture over the chicken.

Arrange half of the sliced Brie cheese on top and pour 1/2 cup of the half and half over the cheese. Repeat the layers with the remaining ingredients ending with a generous layer of sliced Brie.
