Cook the pappardelle noodles according to package instructions, drain and set them aside.

In a large pan, heat the olive oil over medium-high heat. Add Italian sausage, breaking it into smaller chunks and let it brown.

Remove the cooked sausage from the pan and set aside. In the same pan, add the sliced onion, salt, Italian seasoning, and black pepper. Cook until onions turn golden.
