In a food processor, combine tahini and lemon juice; process for 1 minute. Scrape the sides and bottom of the bowl and process for an additional 30 seconds.

Add the olive oil, minced garlic, cumin, and salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl, then process for another 30 seconds until well blended.

Drain and rinse the chickpeas.

Add half of the chickpeas to the food processor and process for 1 minute. Scrape the sides and bottom of the bowl, then add the remaining chickpeas and process until thick and smooth, about 1 to 2 minutes.

With the food processor running, slowly add 3 tablespoons of water to achieve the desired consistency.
