Thoroughly wash the cucumber, then peel and chop coarsely. Place the chopped cucumber into a colander and press down with the back of a spoon to squeeze out the excess juice.

In a food processor, add the squeezed cucumber, Greek yogurt, peeled garlic clove, olive oil, lemon juice, chopped fresh dill and sea salt. Pulse until the mixture is well-combined but still has some texture.

Transfer the tzatziki sauce to a serving bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
