In a large ovenproof skillet or medium baking dish, combine cherry tomatoes, quartered shallot, smashed garlic, and all but 1 tablespoon of extra virgin olive oil.

Season with 1/2 tsp kosher salt and 1/4 tsp crushed red pepper flakes, and toss to combine.

Place the block of feta into the center of the tomato mixture and drizzle with the remaining 1 tablespoon oil.

Scatter 3 sprigs of thyme over the tomatoes. Bake for 40 to 45 minutes, until the tomatoes are bursting, and the feta is golden on top.

Meanwhile, in a large pot of boiling salted water, cook 10 oz. of pasta until al dente according to the package directions.

Reserve 1/2 cup pasta water before draining.
