Heat a large skillet over medium heat and arrange the bacon in a single layer.

While the bacon is cooking, lightly sprinkle the heirloom tomato slices with salt and transfer them on a paper towel to drain.

In a small bowl, combine the mayonnaise, fresh lemon juice, zest from a lemon, and minced garlic to make the lemon-garlic mayo spread.

Spread a good amount of the lemon-garlic mayo on one side of each bread slice.
