Peel the carrots and slice them into half-inch rounds. Finely chop fresh parsley and set aside.
COOKING
2
In a thick-bottomed, oven-safe skillet, add enough water to cover the bottom by approximately 1/2 inch.
FINISH WITH
3
Place the skillet on medium heat and add the sliced carrots. Boil them for about 5 minutes.
4
After 5 minutes, drain the water completely from the skillet. Add the butter, light brown sugar, salt, and pepper to the carrots.
5
Mix everything together in the skillet until the carrots are completely coated. Continue stirring for a couple of minutes to let the butter and sugar create a glaze.
6
Now place the skillet on low heat and keep cooking the carrots while stirring occasionally for about 15-20 minutes, or until the carrots turn tender and golden brown.
7
Taste a carrot slice, adjust salt and pepper if necessary. When ready, sprinkle the chopped parsley over the carrots before serving.
8
Serve the caramelized carrots warm in the skillet for a rustic presentation
