Heat olive oil in a pot or skillet over medium heat.

Cook bacon until crispy. Transfer to a plate lined with paper towel.

Cook chicken pieces in the same pot until browned. Transfer to a separate bowl.

Saute mushrooms in the same skillet until light golden. Add to the bowl with chicken.

Saute garlic and onion in butter until softened.

Turn the heat up to high, add rice and stir until partially translucent.

Pour in the wine, scraping the bottom of the pan to loosen any brown bits. Cook until the alcohol smell evaporates.

Turn down heat to medium-low and add about 3 cups of chicken broth.

Cook until most of the broth has been absorbed, stirring occasionally.

Add more broth in 1/2 cup increments, stirring each time until the broth is absorbed, until the rice is tender.

Once rice is cooked, add the cooked chicken and mushrooms back into the risotto, just to reheat.

Take pot off the heat, and stir in the remaining butter, and the Parmesan cheese.

If desired, add additional broth for a slightly soupier risotto.

Finally, top the risotto with the crispy bacon and garnish with fresh parsley before serving.
