Place the peeled and chopped russet potatoes in a large pot, adding enough water to cover the potatoes. Raise the heat to high and bring to a boil. Lower the temperature and simmer the potatoes until they soften, around 20 minutes.

Drain the potatoes and put them back into the pot. Add the unsalted butter, sour cream, milk, garlic powder, salt, and one cup of the shredded cheddar cheese. Use a potato masher to thoroughly combine all the ingredients until smooth and creamy.
