When does hominy expire?
Unopened canned hominy can last for several years in a cool, dry pantry, as long as it remains unopened and does not show signs of damage, rust, or swelling. Always check the expiration date on the can to be sure. Once opened, canned hominy should be used within 3 to 5 days if stored in a covered container in the refrigerator. Dried hominy, if stored properly in an airtight container, can last up to a year in the pantry. If you decide to freeze cooked hominy, it can last for 2 to 3 months.
How do you tell if hominy is bad?
You'll know the hominy has gone bad if it starts to emit a foul or unusual odor, or if you see signs of mold. Any can that is bulging or leaking should not be eaten, as this is a sign of bacterial growth. If the hominy has been sitting in your refrigerator for more than a week, it would be safer to discard it. Lastly, if the hominy has dried out too much and does not soften when soaked and cooked, it's time for it to go.
Tips for storing hominy to extend shelf life
• Store unopened canned hominy in a cool, dry place away from heat, moisture, and direct sunlight. Put them in the back of your pantry, not too high or low. Clear the space around them for better air circulation.
• Once opened, transfer any unused canned hominy into an airtight container, cover it, and store it in the refrigerator. Don't keep it in the opened can as it can react with the metal and alter the taste.
• Keep dried hominy in an airtight container in a cool, dark and dry place. Keeping it airtight is key to avoid moisture and pests, and keep its fresh, nutty flavor intact.
• If you decide to freeze hominy, make sure it's cooled first. Put it in freezer-safe containers or bags. Leave a little gap at the top of the container as the hominy will expand when frozen.
• To defrost hominy, transfer it from the freezer to the refrigerator a day before you plan to use it. It can also be directly heated from the freezer, just expect it to take a little bit longer.
