When does evaporated skim milk expire?
Unopened cans of evaporated skim milk can last for as long as 12 to 18 months past the date printed on the can when stored correctly. Once opened, evaporated skim milk should be transferred to a tight-sealing, non-metallic container and kept refrigerated where it should maintain its quality for about 4 to 6 days. Never consume milk directly from the can once opened as the metal may interact with the milk which may make it spoil faster. Freezing evaporated milk is not recommended as it changes its texture and appearance.

The easiest way to tell if evaporated skim milk has gone bad is to smell it. A sour, off-putting or rancid smell is a clear indicator that the milk is spoiled and should not be consumed. The texture of the milk may also change, it can be lumpy or thicker than normal. If you notice any mold or discoloration, do not consume the milk - these signs indicate that the milk is spoiled.

• Once opened, pour the remainder into a nonmetallic, airtight container and keep it refrigerated.
