Zesty Shrimp Rotini Pasta with Avocado-Cilantro Sauce

Place fresh cilantro, fresh oregano, minced garlic, red pepper flakes, smoked paprika, red wine vinegar, pitted avocados and olive oil in a food processor. Blend the mixture until it is completely smooth. Set the sauce aside.
PASTA AND ASSEMBLY

Bring a large pot of water to a boil and add the rotini pasta. Cook as instructed on the box or until al dente. During the last 3 minutes of the pasta cooking, add the halved cherry tomatoes into the boiling water to soften them and release some juices.

While the pasta is cooking, heat a large skillet over medium high heat. Once hot, add the seasoned shrimp and sauté each side for 2 to 3 minutes until pink and slightly golden. Remove the shrimp from the pan and set aside.

Drain cooked pasta and tomatoes and return to large pot. Combine pasta, tomatoes and Avocado-Cilantro Sauce. Mix thoroughly until pasta is well coated with Avocado-Cilantro Sauce.
