Heat the canola oil in a large skillet over medium heat.
2
Add the sliced chicken breasts to the skillet and saute until cooked-through. Transfer the cooked chicken to a plate and cover to keep warm.
3
In the same skillet, arrange the plain ramen noodles, followed by the sliced bell peppers and onions.
4
Pour 1.25 cups of water into the skillet. Cover the skillet and let it cook over medium-high heat for about 5-7 minutes until the noodles soften and the water is fully absorbed.
5
Meanwhile, in a separate bowl, whisk together the remaining water, hoisin sauce, low-sodium soy sauce, rice vinegar, toasted sesame oil, and minced garlic.
6
Pour the sauce into the skillet. Add the cooked chicken and roasted cashews. Mix well to combine all the ingredients.
7
Let it cook for 3-5 minutes until cashews slightly soften.
8
Garnish with thinly sliced green onions and serve hot.
