1 tbsp corn starch
1/2 cup low sodium soy sauce
1/3 cup brown sugar
TOFU
14 oz extra firm tofu
pressed
1 tbsp corn starch

1 tbsp sesame seeds

Combine white rice and water in a pan, bring to a boil.

Cover, reduce heat and simmer until all liquid is absorbed.

When ready to serve, mix in lime juice, lime zest, and half of the green onions.
GOCHUJANG SAUCE

In a saucepan, combine low-sodium soy sauce, brown sugar, gochujang, rice vinegar, sesame oil, minced garlic, and grated ginger.

In a small bowl, mix 1 tablespoon corn starch and 2 tablespoons water, then stir it into the saucepan.

Bring sauce to a boil, then lower heat and simmer until thickened. Set aside half of the sauce for serving.

Cut pressed tofu into squares and toss with 1 tablespoon corn starch.

Heat oil in a skillet, add tofu, and cook until all sides are lightly browned.

Pour half of the gochujang sauce into the skillet, stirring gently to coat the tofu. Cook on low until the sauce caramelizes.
ASSEMBLY

Divide rice among 4 bowls, top with tofu, and sprinkle sesame seeds and remaining green onions.
