Combine the cayenne, brown sugar, garlic powder, and smoked paprika in a bowl. Mix well and set aside.

In a medium bowl, whisk together eggs, buttermilk, and Sriracha until well combined.

In another bowl, mix together flour and salt.

Dredge the chicken thighs in the flour mixture shaking off the excess, then dip it in the buttermilk mixture, and finally coat it once again in the flour mixture. Repeat with all chicken thighs.

Heat around 1/4 inch of neutral oil in a large pan over medium heat. Once it's hot, add the coated chicken thighs. Cook for about 7-10 minutes on each side until golden brown and crispy.

Remove the chicken from the pan and drain on paper towels. While still hot, brush each chicken with the prepared spice mixture generously.

In a large bowl, combine the coleslaw mix, lime juice, and cilantro. Mix until everything is well coated.

Spread mayo on both insides of the Brioche Buns. Place a piece of spicy chicken on the bottom half of the bun, layer with pickles and top with a generous portion of the slaw. Cover with the top half of the bun to complete the sandwich.
