Mix bite-sized steak cubes, 3 cloves of minced garlic, salt, black pepper, soy sauce, Chinese cooking wine, and baking soda in a bowl for marination. Set aside for 20 minutes.

Heat up 2 tbsp of cooking oil in a pan over medium heat, then add the remaining minced garlic. Fry until golden brown and crispy, which will infuse the oil with a garlicky aroma.

Remove the golden-brown garlic pieces, leaving the flavored oil in the pan.

Turn the heat up to medium-high. Place the marinated steak cubes in the pan. Let them sear undisturbed for 1 minute to develop a rich brown crust.
