1 1/2 tbsp smooth peanut butter

1/2 tsp sesame oil

1 1/2 tsp brown sugar

2 1/2 tbsp hot water

2 1/2 tsp tamari soy sauce

1 tsp sriracha sauce

1/2 tsp minced garlic

3 tbsp tamari soy sauce

1 handful fresh cilantro

cut into 0.5 inch wide strips

1 cup mixed salad leaves

1 1/2 tbsp maple syrup

Preheat your oven to 350 degrees Fahrenheit (175 Celsius) and line a baking sheet with silicone mat or non-stick baking paper.

In a shallow dish, mix together the tamari soy sauce, sesame oil, maple syrup, minced garlic, rice vinegar and cornstarch.

Place your tofu strips in the marinade ensuring full coating.

Leave the tofu to absorb the flavors for 15 minutes.

Shake off excess marinade and line tofu strips on your prepared baking sheet.

Bake the marinated tofu for about 20 minutes, until they turn golden and crispy.

SPRING ROLL ASSEMBLY

To assemble, briefly dip a sheet of rice paper in warm water just until it softens. Lay it flat on a cutting board.

Layer a few pieces of baked tofu on the bottom third of the soft rice paper. Follow with cucumber strips, carrot strips, avocado slices, cilantro and mixed salad leaves.

Start rolling the bottom edge over the fillings, tuck in the sides midway, and continue rolling till it's fully wrapped.

SPICY PEANUT SAUCE

For the spicy peanut sauce, combine the smooth peanut butter, tamari soy sauce, sriracha sauce, sesame oil, brown sugar and hot water in a bowl and whisk until smooth.
