Cut the waxy potatoes (with skins on) into bite-sized pieces and place them on a large baking sheet. Drizzle with 1 tbsp of olive oil and season generously with salt. Bake for 10 minutes.

While the potatoes are baking, peel the red onion and cut into thin wedges. Peel and finely chop (or grate) the garlic clove. Chop the courgette into bite-sized pieces.

Roll the lemon with your hand on a hard surface (to release more juice) and cut into wedges. Juice the lemon wedges into a medium-sized bowl and add the juiced wedges to the bowl.

Add the diced chicken, dried oregano, chopped garlic, courgette, and onion wedges to the bowl with the lemon juice. Add 3 tbsp of olive oil and season with salt and pepper. Mix well to combine—this is your chicken mixture.

Spread the chicken mixture evenly over the baking sheet with the partly-cooked potatoes. Bake for 15 minutes.

While the chicken mixture bakes, crumble the feta cheese. After 15 minutes, add the black olives and cherry tomatoes to the baking sheet. Sprinkle the feta cheese on top of the chicken, potatoes, and vegetables.

Return the baking sheet to the oven and cook for an additional 10-15 minutes or until the potatoes are soft and the feta cheese is lightly golden.
