In a large mixing bowl, combine chopped Granny Smith apples, brown sugar, cornstarch, ground cinnamon, and a pinch of nutmeg.

Preheat your oven to 356°F (180°C) and lightly grease a standard 12-cup muffin pan.

Roll out the store-bought vegan pie crust onto a lightly floured surface to approximately ⅛ inch thick. Use a 4-inch round form to cut out 12 circles of dough.

Press each dough circle into the bottom of a muffin pan cup, leaving a tiny rim of dough sticking out at the top. Fill each cup with the apple pie filling until nearly full, using about 2-3 tablespoons per pie bite.

Roll out the remaining pie dough to create a top crust to cover each pie bite. To make a lattice design, cut out thin strips of dough with a pizza cutter or knife, then weave together to form a lattice. Cut out a circle of the weaved lattice dough just large enough to cover the top of each pie bite.

Carefully place the lattice on top of each pie bite using a cake spatula. Gently press the top crust onto the bottom crust with your fingers, sealing the sides.

Brush the tops of each pie bite with non-dairy cream and sprinkle with additional brown sugar if desired.
