Peel the potatoes and grate them using a large-hole grater.

Place the grated potatoes on a kitchen towel. Gather the corners of the towel to form a pouch and squeeze out as much moisture as you can.

Transfer the squeezed potatoes to a large bowl. Add cornstarch, salt, black pepper and a beaten egg. Mix until all ingredients are well combined.

Divide the potato mixture into four equal portions. Shape each portion into a compact patty.

Heat oil in a non-stick pan over medium heat.

Place the potato patties in the pan and fry each side for about 5 minutes or until golden brown and crispy
