In a large skillet, heat the olive oil over medium-high heat. Season the bite-sized chicken pieces with salt and black pepper, then add to the skillet. Cook until no longer pink in the center and lightly browned, about 5 minutes on each side. Remove the chicken from the skillet and set aside.
