2 cups low sodium chicken broth

Heat a deep 12-inch skillet over medium heat and add 1 tablespoon of olive oil

Add the chopped onion and diced carrots to the skillet, cooking for 5 minutes or until they start to soften

Move the onions and carrots to the side of the pan, add the chicken pieces to the center and cook until browned, about 2-3 minutes per side
