When does whole spelt expire?
Unopened whole spelt grains stored in a cool, dry place can last up to a year, sometimes even more, when compared to the printed date on the package provided it's not exposed to heat, moisture or pests. Once opened, the grains should ideally be used within a few months (6 months is a good frame) to maintain the best quality. If you choose to freeze your whole spelt, it can last indefinitely, but for the best quality, use it within a year.
How do you tell if whole spelt is bad?
It might be time to toss your whole spelt grains if they have an off smell, this might be musty or mouldy. Also look for any signs of pests or insect infestation as they're fond of grains. Remember, when in doubt, trust your senses. If spelt smells off, has changed color or has pests in it, it's best to get rid of it.
