• Transfer soup to airtight containers as soon as possible after opening. This prevents air from causing it to spoil faster.
• Allow the soup to cool before you put it in the refrigerator or freezer. This prevents condensation from building up, which can lead to premature spoiling.
• If freezing, leave at least 1 inch of headspace at the top of your container, as the soup will expand when frozen.
• To best preserve flavor when freezing, defrost the soup in the refrigerator for 24 hours before reheating. However, if you're in a rush, you can also defrost it in the microwave or on the stovetop.
