When does ricotta salata expire?
Unopened Ricotta Salata can last for about two to four weeks past its printed expiration date if stored in the refrigerator. Once you've opened it, however, it will last for around one to two weeks if you put it back in the fridge immediately after use. In the freezer, Ricotta Salata can be safely stored for up to two months; beyond that time, its texture and taste may change, but it won't pose a food safety risk.
