When does palm sugar expire?
Unopened palm sugar can last for about 2-3 years stored in a cool, dark place. Don't be guided strictly by the expiration date on the package as it's often a conservative estimate; palm sugar, given its sugar content, is less likely to spoil. Once opened, palm sugar keeps well for about one year if it's stored properly (covered and in a cool, dark place). Granulated or paste palm sugar should be generally used within 6-8 months, but if stored properly, it can remain good for longer. Palm sugar can be frozen indefinitely, but there's usually no need since it has such a long pantry life.
How do you tell if palm sugar is bad?
Palm sugar generally has a long shelf life and does not readily spoil. However, if it develops a peculiar odor, changes color, or shows signs of mold growth, it should be discarded. Palm sugar can harden over time, especially if exposed to air, but this does not necessarily mean that it has gone bad. It can be softened by placing the package in a warmer environment or by grating the hardened sugar before use. The presence of insects or other pests in the palm sugar is another sign that it has gone bad and should be thrown away.
Tips for storing palm sugar to extend shelf life
• Keep palm sugar in a cool, dark and dry place for optimal storage. Exposure to heat and sunlight can degrade its quality over time.
• Store palm sugar in a well-sealed container to protect it from moisture and pests. A glass jar with an airtight lid is ideal.
• Don't use wet utensils to scoop out palm sugar from its container. Moisture can introduce mold and reduce its shelf life.
• If your palm sugar has hardened, place it in a sealed plastic bag and roll over it with a rolling pin to break it up, or grate it with a fine grater.
• Palm sugar can be frozen to keep it fresh for a longer period. However, be sure to thaw it before use by leaving it at room temperature.
