Expiration & Storage Tips
When does Gingerbread Cake expire?
Generally, your homemade gingerbread cake will stay fresh for 2-3 days at room temperature if stored properly. When refrigerated, it can last up to a week. If you choose to freeze the cake (ensure it's well wrapped!), it can stay good for up to three months. Once thawed though, you should consume it within a few days.
How do you tell if Gingerbread Cake is bad?
Stale cake often becomes hard and dry. Check for an off smell, a change in color or the appearance of mold, which indicates the gingerbread cake has gone bad. Remember, when in doubt, it's safer to throw it out.
Tips for storing Gingerbread Cake to extend shelf life
• Wrap the gingerbread cake tightly in cling film to prevent air from drying it out.
• Keep the cake in a cake tin or airtight container.
• If refrigerating, once the cake is completely cool, wrap it in cling film and put in an airtight container.
• For long term storage, cut the cake into portions and freeze them. Make sure to wrap each piece tightly in cling film, then place them in a zip-lock bag before freezing.
• When you want to eat your frozen gingerbread cake, let it thaw in the refrigerator overnight and consume within a few days.
