Blend the chopped mint, lime juice, olive oil, rum, agave syrup, 1/2 teaspoon of salt and black pepper in a food processor until well combined.

Keep aside 4 tablespoons of the marinade for later. Add the rest to a bowl with the cubed chicken and toss well to coat each piece.

Allow the chicken to marinate for at least 10 minutes.

In the meantime, prepare your red onions by cutting them into 1-inch pieces.

Thread the marinated chicken and onion pieces alternately onto skewers.

Grill the skewers for 8 minutes.

Flip the skewers, brushing them with the leftover marinade, and allow them to grill for another 8-10 minutes or until a meat thermometer inserted into the chicken reads 165 degrees Fahrenheit.
