Preheat your grill to medium-high heat.

Blend the chopped mint, lime juice, olive oil, rum, agave syrup, 1/2 teaspoon of salt and black pepper in a food processor until well combined.

Keep aside 4 tablespoons of the marinade for later. Add the rest to a bowl with the cubed chicken and toss well to coat each piece.

In the meantime, prepare your red onions by cutting them into 1-inch pieces.

Thread the marinated chicken and onion pieces alternately onto skewers.

Grill the skewers for 8 minutes.
