Slice the chicken breasts in half lengthwise so you have 8 thin chicken cutlets.

Place each cutlet in a quart-sized zip-lock bag or between 2 sheets of plastic wrap and pound into 1/8-inch thick cutlets.

Season both sides of the chicken cutlets with garlic salt and black pepper.

Spread 1 Tbsp of pesto sauce in the center of each cutlet. Top with 2 thin tomato slices and sprinkle with 2-3 Tbsp of shredded mozzarella cheese.
