In a mixing bowl, combine pineapple juice, grated ginger, soy sauce, minced garlic cloves, sesame oil, light brown sugar, Kosher salt, and black pepper.

Mix well until the marinade is well combined. Reserve 1/2 cup of the marinade for later.

Place chicken thighs in a large sealable plastic bag or a shallow dish and pour the remaining marinade over the chicken. Make sure the chicken is well-coated. Cover or seal the container and refrigerate for at least 6 hours, or overnight for best flavor.
