In a mixing bowl, combine pineapple juice, grated ginger, soy sauce, minced garlic cloves, sesame oil, light brown sugar, Kosher salt, and black pepper.

Mix well until the marinade is well combined. Reserve 1/2 cup of the marinade for later.

Place chicken thighs in a large sealable plastic bag or a shallow dish and pour the remaining marinade over the chicken. Make sure the chicken is well-coated. Cover or seal the container and refrigerate for at least 6 hours, or overnight for best flavor.

Preheat the oven to 400F (200C).

Remove chicken from the marinade and allow excess to drip off. Arrange the chicken thighs, skin side down, on a baking sheet or cast iron skillet.

Bake for 20 minutes, then flip the chicken thighs and pour the reserved 1/2 cup marinade over them. Bake for an additional 15 minutes, or until the chicken is fully cooked and an internal temperature of 165F (74C) is reached.

Switch the oven to broil and broil the chicken for 3-5 minutes, watching carefully to avoid burning, to get the skin crispy.
