In a large bowl, mash the cooked potatoes using a potato masher until each piece is broken up but the potatoes are not pureed. A bit of texture is desirable.

Add the chopped fresh spinach, sliced green onions, roughly chopped cilantro, cumin, 3/4 tsp salt, garam masala, and ground black pepper to the mashed potatoes. Stir well to combine.

Divide the store-bought pizza dough into 8 equal parts and shape each piece into a ball. If the dough begins to dry out, cover it with a damp, clean kitchen towel.

Working with one ball at a time on a lightly floured surface, roll out the dough into an 8-inch circle.

Spread a portion of the spinach potato filling onto one half of the dough circle, leaving a 1/2 inch border around the edges. Be careful not to overstuff the flatbread, as it may tear or the filling may leak out during cooking.

Moisten the edge of the dough with a bit of water and fold over the dough to cover the filling. Press the edges firmly to seal the flatbread. Repeat with the remaining dough balls and filling.
TO COOK THE FLATBREADS

Heat a skillet over medium heat and add a teaspoon of vegetable oil. Once heated, place a flatbread in the skillet and cook covered for 2 minutes. If the flatbread is browning too quickly, reduce the heat.

Flip the flatbread over, and cook covered for another 1-2 minutes.

Continue with the remaining flatbreads, adding a bit more oil to the skillet as needed. Place the cooked flatbreads on a wire cooling rack or keep them in a warm oven until ready to serve.
