Mozzarella-Basil Stuffed Chicken with a Hint of Caprese
This tantalizing Mozzarella-Basil Stuffed Chicken recipe is quick to whip up and perfect for both busy work nights and dinner parties. Infused with the flavors of a classic Caprese salad, and topped with a balsamic glaze for an added layer of gourmet flair.
Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with foil and spray with nonstick spray.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Sauté until the onion is translucent, about 3-4 minutes.

Add the minced garlic to the skillet and sauté for another 30 seconds.

Add the baby spinach to your skillet, stirring until it wilts, about 2-3 minutes. Remove from the heat and set aside.

Season both sides of the pounded chicken breasts with the remaining salt, pepper, and 1 tablespoon of olive oil.

Layer 1/4 of the spinach mixture, a few slices of tomato, mozzarella cheese, and fresh basil leaves on one end of each chicken breast.
