Mozzarella-Basil Stuffed Chicken with a Hint of Caprese
This tantalizing Mozzarella-Basil Stuffed Chicken recipe is quick to whip up and perfect for both busy work nights and dinner parties. Infused with the flavors of a classic Caprese salad, and topped with a balsamic glaze for an added layer of gourmet flair.
Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with foil and spray with nonstick spray.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Sauté until the onion is translucent, about 3-4 minutes.

Add the minced garlic to the skillet and sauté for another 30 seconds.

Add the baby spinach to your skillet, stirring until it wilts, about 2-3 minutes. Remove from the heat and set aside.

Season both sides of the pounded chicken breasts with the remaining salt, pepper, and 1 tablespoon of olive oil.

Layer 1/4 of the spinach mixture, a few slices of tomato, mozzarella cheese, and fresh basil leaves on one end of each chicken breast.

Fold the other end of each chicken breast over to cover the stuffing and secure it with a toothpick.

Place your stuffed chicken breasts on the prepared baking sheet. Bake them for 15-20 minutes, or until the chicken is cooked through and no longer pink in the middle.
