Preheat the oven to 200°C/180°C fan/ gas 6.

Heat the olive oil in a large non-stick pan over medium heat. Add the sliced red onions and cook for 2 minutes until soft.

Add in the lean ground beef and cook until browned, around 5-7 minutes. Drain any excess fat.

Stir in the chipotle chili paste and water. Allow it to simmer until all the water has evaporated, around 7-9 minutes.

Brush each tortilla wrap lightly with olive oil, then press each one into an ovenproof bowl (pudding basins work well). Bake for 5-6 minutes until golden and firm. Remove from the oven and keep aside.

Layer each tortilla case first with shredded lettuce, followed by a layer of the chipotle beef. Top it with diced cucumber, halved cherry tomatoes, shredded cheese, and black beans.

Add a dollop of Greek yogurt on top of each bowl, squeeze a wedge of lime over it, then sprinkle with paprika to serve.
