1
Boil a pot of water with 1/2 tsp of salt. Add the spaghetti and cook for 8-10 minutes until al dente. Reserve about 1 cup of pasta water before draining the spaghetti.
2
Heat 3 tbsp of extra virgin olive oil in a large pan over medium heat.
3
Add the thinly sliced garlic to the pan and sauté for approximately 3 minutes until lightly golden.
4
Add the chilli flakes to the pan and sauté for a minute.
5
Add the chopped cavolo nero to the pan along with the lemon juice and about 1/2 cup of the reserved pasta water. Let it simmer for 3-4 minutes until the cavolo nero is tender.
6
Stir in the cooked spaghetti to the pan. Add more pasta water if needed to get a loose, glossy sauce.
7
Season with remaining 1/2 tsp of salt and 1/2 tsp of black pepper.
8
Remove the pasta from the heat and stir in 3/4 of the chopped parsley.
9
Divide the spaghetti into two servings. Drizzle each with 1/2 tbsp of extra virgin olive oil, sprinkle with vegan parmesan, and garnish with the remaining parsley. Serve immediately and enjoy.
