Preheat your oven to 400° F.

Place the trimmed mushrooms in a large mixing bowl.

Add the extra virgin olive oil, minced garlic, finely chopped chives, kosher salt and black pepper to the bowl. Toss everything together until the mushrooms are evenly coated.

Spread the coated mushrooms out evenly on a baking sheet.

Roast the mushrooms in your preheated oven for 10-12 minutes, or until they're browned and juicy.

Remove the baking sheet from the oven. Immediately deglaze the baking sheet by pouring the white wine directly onto it. Stir the mushrooms around in the wine, scraping any bits stuck to the baking sheet.

Serve the mushrooms warm. If storing, wait for them to cool before moving to an airtight container. They can be refrigerated for up to 2 days and are just as delicious cold or reheated.
