In a large bowl, add the lean turkey mince, wholemeal breadcrumbs, finely chopped red onion, crumbled feta, finely chopped mint leaves, fresh parsley, garlic powder, and salt.

Use a wooden spoon to gently mix the ingredients together. Then, massage the mixture with your hands for a few minutes until it becomes uniform.

Cover the bowl with a cling film and refrigerate for 30 minutes. This will allow the flavors to meld together and make the forming of the meatballs easier.

Preheat your oven to 180C (350F).

Take the mince mixture out of the fridge and roll them into ping pong ball-sized meatballs, approximately 4cm diameter. This recipe should make approximately 35 meatballs.

Arrange the meatballs on a baking tray lined with parchment paper, ensuring they are spaced apart.

Drizzle the meatballs with extra virgin olive oil and place the tray into the preheated oven.
