The Golden Garlic & Thyme Smashed Potatoes are a delightful harmony of creamy insides and crispy exteriors. Infused with garlic and thyme, these delicious potatoes are a perfect side dish for any meal.
Place the 6 medium Yukon Gold potatoes in a large pot, and fill with water until the potatoes are just covered.

Add 1 tablespoon salt, and bring the water to a boil over high heat. Cook the potatoes until a knife can easily pierce them, about 20-25 minutes.

While the potatoes are cooking, preheat the oven to 425°F (220°C). Mix 3 tablespoons olive oil, 3 tablespoons vegetable oil, and 2 minced garlic cloves in a small bowl.

When the potatoes are cooked, drain thoroughly and place them on a well-greased baking sheet, leaving some space between each potato.

Using a potato masher or the bottom of a glass, gently flatten each potato until it is about 1-inch thick.

Drizzle the garlic and oil mixture evenly over the smashed potatoes. Season with 2 teaspoons fresh cracked black pepper and place one sprig of fresh thyme on each potato.
