Preheat oven to 425° F (220° C). Place baby potatoes in a large pot and add water to cover them. Add salt to the pot and bring the water to a boil over high heat.

Reduce heat to medium and simmer the potatoes for about 15 minutes or until fork-tender. Drain and let them cool.
SEASONING

In the meantime, mix together chopped fresh basil and finely chopped plum tomatoes in a bowl to make the seasoning.
POTATOES

Place cooled potatoes on a parchment lined baking tray and carefully smash each one with the back of a fork.

Brush smashed potatoes with olive oil, then evenly distribute the tomato basil seasoning over them.
TOPPING

Top each potato with the grated mozzarella cheese.

Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and golden brown.
